Modern West Coast IPA

The way “West Coast” IPA was onced defined has changed to more of an “American” IPA, and “West Coast” IPA is now a modern take on the traditional, which is still bright, yet not as rich in color, a soft bitterness, and most notably, a lot more room to play with a wide range of hops. Feed Me uses Simcoe, Mosaic, and Nelson Sauvin in primary fermentation and is double dry-hopped in secondary, then finished off with a dose of Nelson hop kief in the bright tank.
